Easy Meal Prep Ideas Day 2

Some days are busier than others so doing some meal prep ahead of time can help with staying on track.  When you plan your meals ahead there is less chance of grabbing take out and choosing an unhealthy meal.  There are many meals you can prepare ahead and just throw in the oven when you arrive home.  Easy meal prep ideas are key to success when you are on a path to healthy living.

Tips for  better success with meal planning:

  • Prepare the night before
  • Get up earlier in the morning and prepare one or 2 items for your dinner
  • Have your kids or spouse/significant other help out
  • Make enough for leftovers
  • Plan what nights you will have leftovers

Here is the recipe to the baked tempeh and roasted delicata squash:

Baked Tempeh:


  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. Braggs Liquid Aminos
  • 1 1/2 tsp. sesame oil
  • 1 1/2 tsp. pure maple syrup
  • 1/2 clove garlic, chopped
  • 4 oz. tempeh, cut into 1 inch strips


  1. Combine all ingredients except tempeh in a bowl, mix well
  2. Place tempeh in a shallow dish and poor marinade over
  3. Refrigerate for 1 hour turning tempeh once
  4. Bake at 350 for 10/15 minutes per side

Roasted Delicata Squash:


  • 1 small squash
  • water
  • 1 Tbsp, extra virgin olive oil
  • 1 tsp. himalayan salt
  • 1/2 tsp. Braggs Liquid Aminos
  • 1 Tbsp. fresh lemon or lime juice
  • Herbal seasoning blend, to taste


  1. Preheat oven to 375
  2. Place squash (cut side down) in a shallow dish, with 1/4 inch water
  3. Bake 30-40 minutes
  4. Remove from oven
  5. Season with oil, Braggs, salt, lemon juice and herbal seasoning
