4th Festivities Day 2 of 3

The 4th of July weekend is upon us.  Time to enjoy with family and friends.  This time of year we have many cookouts, graduations, parties, summer vacations and other social gatherings.  When we get together it is always focused around food and drink.  What is on your menu for the summer time celebrations?

Here is a sample menu to give you some new ideas on what to add to your menu or bring to your summer time events and cookouts.


Veggies with hummus or dip

Hummus, tabouli and feta layered and served with pita chips or veggies

Layered taco dip

Fruit platter or bowl

Main Meal:

Hamburgers, grilled chicken or shrimp, BBQ ribs, sausage

Quinoa Salad

Navy Bean Casserole

Potato Salad

Watermelon salad with feta and balsamic glaze

Rice or roasted/grilled potatoes

Roasted or grilled veggies


4th of July dessert – fruit skewers

Trifle with strawberries and blueberries

Brownies with frosting and decorated with red, white and blue sprinkles or M&M’s

Fruit parfait with yogurt and berries

Fruit-Tart Flag


Fill premade miniature tart shells or phyllo cups with sweet mascarpone cream (recipe below), then arrange on a tray and top with blueberries and halved strawberry slices to create stars and stripes.

Mascarpone Cream:Beat an 8-ounce container of mascarpone cheese and 3 tablespoons confectioners’ sugar with a mixer until smooth. Gently fold in 1/2 cup freshly whipped cream.
